You can use long thermocouples to monitor temperature rises but this method doesn't really get into the central core of a large stack, where smouldering combustion may take place.

A costly alternative within covered buildings used for bulk hay storage would be to use aspirating smoke detection.  The high sensitivity would detect the small quantities of smoke produced by smouldering hay at the incipient stages.

Alternatively, store away from other buildings and accept that it could spontaneously ignite and burn like a good-un.

Yes, the sight of smoke emanating from a pile of hay/straw in the distance.
