Yes but stock rooms don't tend to have the same level of security and surveillance that the shelves have.
The presence of those seeking the truth is infinitely to be preferred to those who think they've found it.

Plus in shops like mobile phone stores, where entry control systems on doors are a key part of security the stuff on the shelves is dummy or cabled to the wall, the high value stuff is off the shop floor

Ah, I was being rather close minded there, but you do see it in card shops and all sorts of places where it is quite unnecessary.
